Senior Food Scientist – Remote

Position Overview:
We are seeking a Meat Innovation Specialist to collaborate with customers, demonstrate advanced meat processing technologies, and lead the development of premium meat and protein products. This role combines technical expertise in meat science, hands-on operation of industrial-scale machinery, and customer-focused training. The position requires extensive travel to customer sites to ensure seamless product development, machinery implementation, and training. Key Responsibilities:
- Lead product trials for meat/protein and plant-based food applications, assisting customers in developing innovative, premium products such as dry-cured meats, long-aged hams, and specialty sausages
- Customize and adjust food processing equipment to meet unique customer specifications and production goals
- Use industrial-scale meat processing equipment for blending, mixing, emulsifying, and dry-curing to produce high-quality products
- Provide hands on training for meat-processing clients
- Develop, document, and implement new technologies and formulations, leveraging expertise in microbiology, biochemistry, and pH control
- Prepare detailed reports and analyses of customer product tests, highlighting process improvements and results
- Serve as a technical advisor to culinary teams, ensuring customer success in food product testing and scale-up operations
- Educate and mentor Reiser employees and customers on best practices for formulating, processing, and packaging protein and plant-based products
- Travel extensively to customer locations for hands-on support, training, and project execution
Preferred Qualifications:
- Experience:
- 5+ years in meat production, specializing in premium products like dry-cured meats, long-aged hams, and emulsified sausages
- Proven experience in managing production facilities, optimizing processes, and reducing costs
- Hands-on expertise with advanced food processing machinery, including vacuum stuffing machines, climate-controlled curing units, and automated packaging systems
- Demonstrated success in new product development and commercialization in meat and protein processing
- Technical Expertise:
- Strong background in food safety systems (HACCP) and continuous improvement methodologies (Six Sigma)
- Knowledge of microbiology, biochemistry, and process controls for optimizing ripening and curing
- Education:
- Bachelor’s degree in Meat Science, Food Safety, or a related field
- Certifications in Lean Six Sigma, HACCP, and Food Safety (preferred)
- Skills:
- Exceptional problem-solving abilities and innovative thinking
- Proficiency in food quality management, economic analysis, and advanced technical equipment
